Mirko Paderno Leaves Oliviero in Beverly Hills for Downtown’s Meaty Officine BRERA

An upcoming Arts District stunner adds a top-notch chef.

Longtime Oliviero chef Mirko Paderno has decamped from the Beverly Hills hotel hotspot, leaving the cushy job for something much meatier down in the Arts District. Details started popping up about Paderno’s departure nearly two weeks ago, though there was no word at the time on where exactly he’d end up.

A phone call to Paderno confirms now that he’ll be working as chef de cuisine to Angelo Auriana at the upcoming Officine BRERA on 6th Street in the Arts District. The two worked together previously at Valentino years ago in Santa Monica, and are joining forces again for some of the meatiest Italian food in town.

The move fits perfectly with Paderno’s style, and should allow the chef to break out of the necessary hotel trade he was in at the Avalon. Known for large chops and Northern Italian mains, Paderno joins a from-scratch restaurant that plans to cook in true cucina povera style, grilling simple meats over open wood flame.

The restaurant is still slated for an early fall arrival, as construction is well underway inside. That should give Paderno a few more weeks off between gigs, before cranking up the stoves in the Arts District. For his part, Auriana is still working away at sister restaurant The Factory Kitchen.
